yes you can. i recently was on 225 40 r19 tires.
they absorbed the road very well.
the trick is to make sure you go more narrow if you go taller for fitment.
i change sizes all the time to test out differences. my new set is on 245 35 r19. they look great and i feel (no real measurements done) they are as tall as the 225 40 r19 tires. these looks wider though. might just be a visual illusion.
